Nikita

A creamy, tropical Madeiran drink combining fresh pineapple, vanilla ice cream, light lager and white wine. The result is a sweet, refreshing drink with a milkshake-like texture.

Preparation

  1. 1Process the fresh pineapple in a blender or with a hand mixer.
  2. 2Add the vanilla ice cream and fold until just combined.
  3. 3If the mixture has melted, return it to the freezer until firm again.
  4. 4Combine the pineapple and ice cream mixture with the lager and white wine in a small pitcher.
  5. 5Stir and gently mash with a wooden spoon until well combined. The mixture should have the density and texture of a milkshake.
  6. 6Pour into two small mugs and serve immediately with straws.

Historical Background

Nikita is a traditional Madeiran drink. On Madeira it is commonly prepared with pineapple ice cream, beer and wine. The specialized pineapple ice cream used locally can be approximated elsewhere with vanilla ice cream and fresh pineapple. It is often served with a small snack, known locally as a dentinho.
