Ovshala

A delicate Azerbaijani rose petal sherbet with a beautiful pink color, floral aroma and refreshing taste. Traditionally served well chilled during warm weather and festive occasions.

Preparation

  1. 1Bring the water to a boil.
  2. 2Add the rose petals and lemon juice.
  3. 3Remove from the heat and let the mixture steep for 6–10 hours.
  4. 4Strain the infusion, discarding the rose petals.
  5. 5Stir in the sugar until completely dissolved.
  6. 6Refrigerate until thoroughly chilled.
  7. 7Serve cold, optionally over ice.

Historical Background

Ovshala is a traditional Azerbaijani sherbet prepared from fragrant rose petals. Similar floral drinks have been enjoyed in the Caucasus and the former Ottoman world for centuries, but Ovshala remains one of Azerbaijan's most distinctive traditional refreshments. It is prized for its elegant floral aroma, vibrant pink color and refreshing character.
