Ottoman Sherbet

A traditional Ottoman fruit sherbet made from cherries, plums, grapes and warming spices. Served well chilled, it is one of Turkey's oldest and most celebrated refreshing drinks.

Preparation

  1. 1Place the cherries, plums, grapes, cinnamon stick, cloves and 1 liter of water into a saucepan.
  2. 2Bring to a boil, then reduce the heat and simmer for about 30 minutes.
  3. 3Strain the fruit, reserving the liquid.
  4. 4Press the cooked fruit gently to extract any remaining juice and add it back to the pot.
  5. 5Add the sugar and lemon slice, then simmer for another 5 minutes until the sugar dissolves.
  6. 6Allow the concentrate to cool completely.
  7. 7Refrigerate until well chilled.
  8. 8Before serving, dilute with about 1 liter of cold water (or to taste), pour over ice and enjoy.
