Chicha Morada

Peru's iconic purple corn drink, infused with pineapple, apples, cinnamon and cloves, then finished with fresh lime juice for a refreshing sweet-tart flavor.

Preparation

  1. 1Wash the purple corn and prepare the pineapple and apples.
  2. 2Place the purple corn, pineapple peel and core, apples, cinnamon sticks and cloves into a large pot with the water.
  3. 3Bring to a boil, then reduce the heat and simmer for about 90 minutes until the liquid becomes a deep purple.
  4. 4Strain the liquid, discarding the solids.
  5. 5Stir in the sugar while the drink is still warm and let it cool completely.
  6. 6Add the fresh lime juice only after the drink has cooled.
  7. 7Serve well chilled over ice, optionally garnished with diced apple and pineapple.

Historical Background

Chicha Morada is one of Peru's most beloved traditional beverages. Made from native Andean purple corn, it has been enjoyed since pre-Columbian times and is served throughout Peru alongside everyday meals and festive occasions.
